Kathy's Mother's Stuffed Manicotti
This recipe comes from Kathy in beautiful Spring Hill, TN. The recipe was created by her mother, Beverly, and is a family favorite! This recipe was so much fun to make and it feels like the perfect comfort food on a cold day. Recently I made it for my family and I am not joking, we finished the entire dish in one seating. The kids loved it, Austin loved it and I could not have been more happy!

Ingredients:

1 pound ground beef

2 cloves garlic, crushed

1 medium yellow onion, diced

2 tablespoons olive oil

16 oz mozzarella cheese, shredded

1 teaspoons salt

8 oz sour cream
-
12 manicotti shells, cooked al dente and drained

25 oz tomato pasta sauce
-
2 teaspoons oregano
-
2 oz of grated parmesan cheese
Directions:

Preheat the oven to 350 degrees.

In a heavy duty pan, saute onion, garlic, ½ teaspoon of salt, and olive oil until translucent.

Add ground beef to onion mixture and cook until golden brown. Turn off heat when done and set aside.

In a large bowl, mix 8 oz mozzarella, sour cream, oregano and ½ teaspoons salt.

Once the beef mixture is at room temperature, pour the beef mixture into the mozzarella bowl. Mix well.

Fill each cooked and cooled manicotti with about 1/2 cup of meat and cheese mixture.

Pour ¼ of the pasta sauce in the baking dish. Place each filled manicotti in the baking dish and cover all the shells with the remaining tomato sauce.

Sprinkle the top of the shells with a combination of parmesan cheese and remaining mozzarella cheese.

Cover the baking pan with foil and bake for 15 minutes.

Remove the foil and bake for 35-40 minutes longer, or until the cheese starts to be golden and bubble.

Serve warm.
