Sweet Peach Grilled Cheese

During this time of year I want to eat all the stone fruit that I can get my hands onto! This has led me to make sooo many of these delicious Peach Grilled Cheese Sandwiches at home, and my boys have not been complaining. I also have been adding honey, which just adds such a light sweetness that I truly can not get enough! Enjoy this season and enjoy this grilled cheese! 

Makes 2 Sweet Peach Grilled Cheese Sandwiches
Active time: 15 minutes
Total Time: 15 Minutes

Ingredients: 

  • 4 thin slices of sourdough bread
  • 2 oz of Cheddar, graded 
  • 4 oz of Gruyere, graded
  • 1 peach, sliced thinly 
  • 2 tablespoons butter
  • 2 teaspoons of honey
  • 2 teaspoons fresh thyme
  • Pinch of Kosher salt

Directions: 

  1. Slather butter onto one side of each slice of bread.
  2. Mix the two cheeses together in one bowl. 
  3. Heat cast iron in a skillet over medium heat. Place two pieces of bread on the skillet, butter side down. Put 2/3rds of cheese on both pieces of bread. Place sliced peaches on cheese. Then put thyme on peaches. Then drizzle honey on thyme, peaches and cheese. Then top with the rest of the cheese. 
  4. Put 2 slices of bread over each sandwich with butter side up. Let the sandwich warm and let the cheese begin to melt. Once cheese begins to melt, carefully flip grilled cheese and continue cooking.
  5. Cook until the cheese is completely melted. Take the sandwich off the heat and top with a little more honey and a pinch of salt. When cooled just a bit cut in half and enjoy. 

Tip: Make sure to not go over medium heat. This is a slow and low situation. You want to melt the cheese but not burn the bread.
