Cowboy Caviar

From what I understand, "Cowboy Caviar" hails from Texas and is meant to be a bit of a joke since cowboys are not really eating a ton of caviar... Let's just say, I have yet to serve caviar after a long day of work. But this is a special dish and it traditionally uses back-eyed peas, which some say looks like fish eggs... but obviously they are just a  bean full of flavor. I love this dish because it is so fresh and once I start eating it with chips I tend to never stop!

Total Time: 10 minutes

Ingredients:

  • 4 Romas Tomatoes, diced
  • 15 oz black beans, rinsed and drained
  • 15 oz black-eyed peas, raised and drained
  • 2 avocados, diced
  • ⅓ red onion, diced
  • 2 cups fresh corn kernels (frozen is fine too) 
  • 1 red or yellow bell pepper, diced
  • 1 jalapeno, deseeded and diced 
  • ½ cup cilantro, diced

For the dressing:

  • ½ cup lime juice
  • ½ cup olive oil
  • 1 tablespoon honey
  • 1 teaspoon Kosher salt
  • 1 garlic clove, minced. 
  • ½ teaspoon cumin
  • ⅛ teaspoon Pepper 

Directions:

  1. Put all the ingredients for the salsa in a bowl and mix together. 
  2. Then add all the ingredients for the dressing into a jar and shake well.
  3. Pour dressing over the salsa and mix some more. 
  4. Serve with tortilla chips and enjoy!
