Cowboy Caviar

From what I understand, "Cowboy Caviar" hails from Texas and is meant to be a bit of a joke since cowboys are not really eating a ton of caviar... Let's just say, I have yet to serve caviar after a long day of work. But this is a special dish and it traditionally uses back-eyed peas, which some say looks like fish eggs... but obviously they are just a  bean full of flavor. I love this dish because it is so fresh and once I start eating it with chips I tend to never stop!

Simple Ceviche

I always forget how good and how easy ceviche is to make! Recently Austin's dad went fishing and dropped off some halibut and I was immediately in the mood for ceviche! It can be a simple light appetizer or a delightful main dish.

Pretty AND Yummy Butter

This might just be the best butter you will ever taste. I love butter, but this butter might just make you speechless. The combination of yummy flavors and beautiful flower makes for the perfect addition to any meal and has become a true Ranch Table favorite.

Classic Bruschetta

Bruschetta is my go-to "girl dinner".  What is a "girl dinner'? In my house "girl dinner" is any meal that I can make quickly, doesn't make a mess, and I can fill it with my favorites. Usually these girl dinners come out when Austin is working late or my boys are with friends. I love using a cutting board as my plate (less to wash) and I love to add other goodies to the board, like cheeses, nuts, and fruits. This is just a fun way to make a quick meal on a night at home.

Kale, Butternut and Cauliflower Salad with a Honey Lemon Dressing

I remember the first time that I was told that one needs to “massage kale” before they can eat it...

Honey Balsamic Salad Dressing

’m a big believer in making your own salad dressing for a few reasons. One, it is way more cost effective. Two, you can make it in less than five minutes with items in your pantry. Finally and perhaps the best part, you can change things a little here and there to make it perfect just for you! Here is my Honey Balsamic Salad Dressing that compliments nearly any salad, but my personal favorite is with romaine lettuce, cherry tomatoes, goat cheese, and topped with candied pecans for a little sweet crunch.

Beet, Carrot, and Arugula Salad

I love making this Beet, Carrot, and Arugula Salad in the winter time and early spring because all these delicious root veggies are in season. I am always looking for new ways to add some greens and the arugula pairs so well with the beets and carrots.

Guacamole

What’s a party without guacamole? Growing up in California, guacamole is a staple at every get together. There is usually a bowl of fresh, homemade guacamole and a basket of tortilla chips to go along...

Honey Glazed Wings

This is a great dish to bring to a party. You make the sauce and marinade ahead of time, and then it is simple to roast a tray full of wings right before heading to...
