One-Pot Cherry Tomato and Burrata Fettuccine

We all love one-pot cooking, because there is less mess, less fuss and tons of flavor! This pasta makes a perfectly fresh light meal, while this is also a simple way to fill up the family on a busy week night. I love how the cherry tomatoes burst and meld so well with the creamy buratta.

Recipe makes 2 to 4 servings.

Special Equipment: a 9" by 13" baking dish

Ingredients:

  • 4 lbs of cherry tomatoes
  • 5 garlic cloves
  • ¼ cup of olive oil
  • 1 teaspoon kosher salt
  • ½ lb of fettuccine (cooked) 
  • 1 8oz ball of buratta
  • ½ cup basil, chopped

Directions:

  1. Preheat the oven to 350 
  2. Put cherry tomatoes, garlic, olive oil and salt into a baking dish. Put in the oven for 30-40 minutes or until tomatoes begin to break open and oil begins to simmer.
  3. Take out the tomato baking dish from the oven and while it is still hot add the cooked fettuccine, break apart the burrata on top and begin to mix. Add salt and pepper to taste, add a bit more oil if needed  and eat right away.
