Simple Ceviche


Simple Ceviche

I always forget how good and how easy ceviche is to make! Recently Austin's dad went fishing and dropped off some halibut and I was immediately in the mood for ceviche! It can be a simple light appetizer or a delightful main dish.

Ingredients:

  • 1.5 lb of halibut (or any other white fish), cut into small bite size pieces 
  • 1 cup of Roma tomatoes, diced (Cherry tomatoes work great as well)
  • 1 cup lime juice (about 5-6 limes)
  • ¼ of red onion, thinly sliced
  • ½ poblano pepper, thinly sliced (If you want more heat add a hotter pepper)
  • ½ cup of cucumber, diced
  • ½ cup cilantro, chopped
  • ¼ cup lemon juice, (about ½ lemon)
  • 2 garlic clove, minced
  • 1 teaspoon of salt, add more to taste 
  • ⅛ teaspoon black pepper
  • 1 semi-ripe avocado, diced.
  • 1 tablespoon of tequila (optional)

Directions:

  1. In a large bowl add the halibut, red onion and lime and mix well. 
  2. Add garlic, poblanos, tomatoes, cucumber, cilantro, lemon juice, salt, pepper and tequila if using.
  3. Mix well, cover with plastic wrap and put in the fridge for 45 mins to an hour. 
  4. Before serving add avocado and more salt if needed. 
  5. Serve with chips or on small tostadas
