Make-Ahead Breakfast Sandwiches
Mornings can be rough. Getting everyone up, dressed and out of the house can be a rush- oh and don't forget a nutritious breakfast! Here is what I love to make ahead and freeze so I can look like a champion on those super rushed mornings. Let's all make sure we get some yummy food so we call can all have a great day!
Makes: 6 breakfast sandwiches
Active Time: 30 minutes
Total Time: 1 hour
Ingredients:
- 10 eggs
- ¼ cup milk
- 1 pound breakfast sausage
- 10 oz cheddar cheese (sliced thinly)
- 6 english muffins
- ½ teaspoon salt
- Pepper to taste
- (Optional: sliced and sautéed bell peppers, onions, garlic)
- Preheat the oven to 350
- In a medium mixing bowl, mix eggs, milk, salt and pepper. (Optional- many times I will also slice thinly and sauté bell peppers, onions and garlic- let cool and put in eggs)
- Pour eggs into a 9x9 baking dish with parchment and place in the oven. Bake for 30 minutes or until a toothpick comes out clean, take out and let cool. When cool, cut into 9 pieces.
- Meanwhile, in a skillet, cook 6 patties as to your liking. Remove from the skillet.
- Cut the muffins in half and place the muffins inside side face down, so that the inside of the muffin will toast in sausage fat. Pull off and let cool.
- Take the bottom side of the english muffin, place a piece of egg, then sausage, then cheese, then top of muffin. Wrap in parchment paper and then plastic wrap and put in the freezer.
- When ready to use: take out of the freezer, take off plastic and put in the oven at 350 for 30 minutes or microwave for 3-5 minutes.
