Classic Bruschetta
Bruschetta is my go-to "girl dinner". What is a "girl dinner'? In my house "girl dinner" is any meal that I can make quickly, doesn't make a mess, and I can fill it with my favorites. Usually these girl dinners come out when Austin is working late or my boys are with friends. I love using a cutting board as my plate (less to wash) and I love to add other goodies to the board, like cheeses, nuts, and fruits. This is just a fun way to make a quick meal on a night at home.
Ingredients:

1 French or Italian Baguette
- 6 Roma Tomatoes, diced
- 2 cloves garlic, minced
- 1 cup basil, roughly chopped
- 1 cup parmesan cheese, graded
- 4 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- ½ teaspoon of Kosher Salt
- ¼ teaspoon fresh black pepper
Directions:
- In a medium bowl, mix tomatoes, garlic, basil, 2 tablespoons olive oil, balsamic vinegar, salt, and parmesan cheese.
- Cut and baguette in about 1/2 inch pieces.
- In a pan on medium, heat 2 tablespoons of olive oil and toast the bread on both sides. Remove bread from heat.
- Top each toasted bread with the tomato mixture. Garnish with a bit more salt and pepper is desired.
