Spud Sub
My Spud Sub is pretty yummy if you as me! My mama used to make this all the time and I’m bringing it back!
Ingredients:
- 1 large Russet potato
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1 teaspoon butter
- 2 slices of cooked bacon (optional)
- 1 large handful of your favorite salad with dressing and cheese!
Directions:
- Preheat the oven to 425 degrees.
- On a baking sheet with parchment place and a potato pricked a few times with a fork.
- Rub olive oil and salt on potato.
- Place potato in oven and roast for 45-1 hour (depending on the size of your potato) or until potato has a crispy shell and soft inside.
- Take out potato and let cool for a few minutes until you are able to touch with your hand.
- Cut potato lengthwise and scrape out about 2/3s of the inside of the potato leaving a layer near the skin.
- Place the butter at the bottom of the potato and keep close so the butter melts.
- Toss together your favorite salad with dressing, cheese and bacon (optional)
- Stuff the potato with all the salad filling, cut in half and enjoy this delicious Spud Sub while warm.
