Spud Sub

My Spud Sub is pretty yummy if you as me! My mama used to make this all the time and I’m bringing it back!

Ingredients:

  • 1 large Russet potato
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1 teaspoon butter
  • 2 slices of cooked bacon (optional)
  • 1 large handful of your favorite salad with dressing and cheese!

Directions:

  1. Preheat the oven to 425 degrees.
  2. On a baking sheet with parchment place and a potato pricked a few times with a fork.
  3. Rub olive oil and salt on potato.
  4. Place potato in oven and roast for 45-1 hour (depending on the size of your potato) or until potato has a crispy shell and soft inside.
  5. Take out potato and let cool for a few minutes until you are able to touch with your hand.
  6. Cut potato lengthwise and scrape out about 2/3s of the inside of the potato leaving a layer near the skin.
  7. Place the butter at the bottom of the potato and keep close so the butter melts.
  8. Toss together your favorite salad with dressing, cheese and bacon (optional)
  9. Stuff the potato with all the salad filling, cut in half and enjoy this delicious Spud Sub while warm.
